Gemista (stuffed tomatoes and peppers)

Gemista is a Greek dish which is both tasty and vegetarian - so there!

All you do is stuff some tomatoes and peppers with rice and seasonings and then bake in the old oven - easy!


Serves: 2
Cost per person: 5 zl

You'll need:

- 2 bell peppers
- 2 tomatoes
- some leftover cooked rice
- 1 onion finely chopped
- 2 cloves of garlic finely chopped
- 2 dried red chillies
- a handful of almond flakes
- 1 tsp of thyme and oregano
- some nice glugs of olive oil
- 100g of crumbled feta cheese

Ok, let's get moving:

1. Fry off the onion for 5 minutes along with the dried chillies. Throw in the garlic. Give it another 5 minutes until the onions are becoming translucent. Get the herbs in and cook for a further 1-2 minutes.


2. Take off the heat. Add the almonds, rice and feta. Mix well. Check the seasoning. Maybe add a little salt and pepper. Meanwhile, get the oven up to 180 degrees.


3. Slice the tops off the peppers and tomatoes and carefully scoop out the inside. Be particularly careful with the tomatoes. Leave a 1/2 cm border around or else it will all collapse in the oven. Hey! careful, I said! Season with salt. Work some olive oil in and around the tomatoes and peppers and place in an oiled baking dish.


4. Stuff!


5. Put the tops back on and pop into the oven for around 30 minutes (or until the skins of the vegetables have started to brown and blemish and bubble!).


6. Enjoy with bread or on their own!


Costing:

- peppers: 3 zl
- tomatoes: 3 zl
- feta: 3.50 zl
- the rest: 0.50 zl

Total: 10 zl

Yeah, I know - I slightly cheated by scoring "the rest" as 0.50 zl, but .... ah.
